I've removed the cat out of my standard exhaust using a drill hammer and chisel and some long pliers the power gain is good

I don't follow bikes without a catalytic converter because of the dirty exhaust. Stinks and irritates. Toxic really.
 
Do you know this for fact or just guessing the noise levels haven't changed!

Not sure what you mean - pretty sure it's louder.

The main point is that exhausts are tuned so the the pressure wave resonates in a specific way. This bike generates the most power somewhere in the 5 - 8 k range - that's where your most efficient scavenging was happening. Where your power is being generated now is unknown.

Also - as RSL mentioned - you ain't doing anyone riding behind you any favors.
