I have been looking at the big block enduro tires... makes the bike look badass

Yes they do!!

On pavement, those semi-knobbies do not offer anywhere near the grip of decent road rubber.

YMMV, but to me there is nothing more important at all times than grip!

all the reviews I read says they do really well on the street. I like the idea of going off raod too.

I had the TKC-80s on my Tiger before I bought the Hyperstrada. Yeah, they don't have the ultimate grip of a sticky street tire, but you'd be surprised. I got them all the way down to the edge and then some. What they lose in contact area, they gain back some in softness. Of course that's why they burn up in 4,000 miles on the road. But they sure were nicer in anything off pavement but mud.

They are the best option off-road, but will be toast in 1,500 miles and illuminate the traction control light and ABS light when riding on the street.

The knobbies really look freaking awesome on our bikes. Sooo tempting.

Is there anything maybe in between the stock Pirellis and the full knobbies that people have been happy with on/off road?

I don't think there are other options. Soon maybe as other tire makers are looking at our 17" size requirements for future offerings.

These are the tires I would like to see in our size:
