I've no idea about DTC or ABS settings, but the major difference in Touring versus Sport is the throttle response at the bottom end. Cracking the throttle in Touring gives a very gentle increase in power, ideal for tricky road conditions or even for two-up riding, followed by a phenomenal step in power as you advance the throttle further. Have you actually confirmed the settings shown in the display?
 
hi nick ! the DTC is on 4 and the ABS on 2 in touring mode ! same in sport mode ! i do not feel much difference in the 2 modes but the bike drives verry well as it is

There are numerous posts about a servo delete gadget on here but i personally have no experience. There are cheaper alternatives then the one you linked (See here) and there is one made in Belgium which is select-able in case of noise concerns (See here). If you get one, please post your experience. They seem like a inexpensive experiment and if they improve low RPM behaviour, i'd be interested also. Cheers!
