I've no idea about DTC or ABS settings, but the major difference in Touring versus Sport is the throttle response at the bottom end. Cracking the throttle in Touring gives a very gentle increase in power, ideal for tricky road conditions or even for two-up riding, followed by a phenomenal step in power as you advance the throttle further. Have you actually confirmed the settings shown in the display?
