Mostly I wanted bias-ply street tires. I knew I was never purposefully taking mine off road so I went with best rated street tires...well, most popular with this style of bike.

And I have been known to go hard on the fronts (on all my bikes) when performing emergency stops (which is reasonably often in the city) causing the rear to start to come forward. Setting it at 2 seems to help prevent this a lot (I've not had the rear start to come round on the Duc yet).

I might set it at 1 for a while and see how I like it - I guess it's the only way to know what suits us each as individual riders. Trial and experimentation FTW!

I practice panic stops every once in a while and the rear never lifts on ABS-1. I usually have the bags on with at least 3 lbs in each. I've never tried a stoppie, but I bet you'd have be pretty far forward on the tank to get it to lift.
